  18. 1/4 tsp Cumin seeds
  19. 2-3 Green cardamom
  20. 1 Black cardamom
  21. 1 piece Mace (Javitri)
  22. 2-3 Cloves
  23. 1" Cinamom
  24. 1/4 tsp Grated nutmeg/Jaifal
  25. strands Saffron- few
  26. 2 tbsp Clarified butter
  27. 4 tbsp Oil

Instructions to make to make Hyderabadi Veg Biryani

  1. Heat oil in a pan.
  2. Add cashew nuts, almonds and raisins and fry and strain it.
  3. Add cumin seeds, black pepper, cloves, mace, green & black cardamon, cinnamom to crackle and keep it aside.
  4. Now, add ginger garlic paste, turmeric powder, red chilli powder, garam masala powder, nutmeg powder and also 2 tbsp water and mix well
  5. Cut all the veggies in equal side and add these in the pan and mix it well.
  6. . Add 1 cup of water and salt as required and cover it.
  7. . Cook it for 5 minutes.
  8. Soak basmati rice for half an hour.
  9. After the rice being soaked, cook half done rice and switch off the flame
  10. Add clarified butter in a pan.
  11. Now, add half done rice and saffron in the first layer. In the second layer, add veggies of thick gravy and also put crushed mint leaves into it.
  12. Now, repeat the first and second layer again.
  13. Lastly, add fried cashew nuts, almonds, raisins and fried onions.
    Cover it and now switch on the gas.
  14. Cook for 2-3 minutes in high flame.
  15. Keep the pan on the tawa and cook for 10-12 minutes in low flame.
  16. Veg biryani is ready to eat.
