  17. 5 tbsps Lemon juice
  18. 1/2 cups Ghee / oil
  19. Saffron (dissolved in warm milk)

Instructions to make to make Hyderabadi dum Biriyani

  1. Dry roast the 5cardamom, 2cinnamon, 6cloves, 2star anise, mace, pepper, fennel and bay leaves and powder them.
  2. Marinate meat with curd, turmeric powder, ginger and garlic  paste, chilli powder, ground masala and lemon juice. Then add half-of the coriander, mint  leaves and salt.
  3. Fry the onion till it becomes brown in color,and add half of it to the meat mixture and mix it very well. Keep this aside for at least 3 hours.
  4. In boiling water,  add the remaining spices and cook the rice until 3/4 done. Drain and set aside.
  5. Heat the ghee in a thick bottomed vessel and add meat mix and fry for 15 minutes. Then add rice over it and drizzle little ghee and saffron milk.
  6. Sprinkle fried-onion,mint&corriander leaves   Over it.
  7. Cover with foil and a heavy lid and cook on dum for 40 minutes on low flame.
  8. Serve with raitha, and pickle.
